Walnut & Hemp Slice

Today I was feeling so tired but needed to get my act together to have guests over in the evening. So what does a health advocate do in sticky situations like this? We keep it really simple!
This evening I will serve this with whipped cream and raspberries or blueberries, giving it a bit of oomph! No one will know that I did it in less than 15 minutes...
My children are circling around the kitchen after I sent out little taste testers, so I guess it will be a resounding success this evening. I have used some of my favourite ingredients in this simple recipe - raw cacao, hemp seeds and gorgeous spices. If you have any of this product in the fridge you can add a teaspoon to raise the taste bar. The honey fermented ginger tastes divine.
Ingredients:
2 Cups Unsweetened Coconut Flakes
2 Cups Walnuts
1 Cup Pitted dates
½ Cup Almonds (Raw or Roasted)
½ Cup Hemp Seeds (Hemp foods Australia)
½ Pumpkin Seeds
2 tbsp Raw cacao (Goodness Mix – Cocoa Kia)
1 tbsp Mixed Sesame Seeds (black and white)
1 tbsp Black Seed (Nigella seed)
1 tsp Chai Spices (Goodness Mix – Mai Chai) cinnamon, cardamom, nutmeg, clove, star anise powder
1 tsp Vanilla essence
1 tbsp of Coconut oil
Method:
Add all ingredients to processor and chop or a few seconds to get a chunky consistency.
Line a small slice tray with cling wrap or backing paper and turn out mixture on to it.
Press down firmly.
Freeze for 15 minutes. Take out of freezer and cut into slices.
Eat straight away or store in a jar in the freezer.
These slices will last for 4 weeks in the freezer.
